Ingredients you need:
- 2 cups of diced and de-seeded Watermelon
- 2 cups of diced and de-seeded Melon (any variety you prefer)
- 2 cups of cucumber, peeled and chopped
- 2 teaspoon of lemon juice
- Zest of one lemon
- 2 tablespoon of fresh parsley, finely chopped
- 1 cup of feta cheese, crumbled
- 1 teaspoon of finely chopped gherkins
- 1/2 teaspoon of hot peppers
- 2 tablespoons Olive oil
- Salt to taste
Method of Preparation:
Cut and combine the melons and cucumber in a bowl. In a smaller bowl, whisk together the lemon juice, lemon zest, salt, peppers and olive oil.
Once smooth, pour over the salad and mix to coat well. Add some crumbled feta cheese and finely chopped parsley on top and serve immediately.
