Tangy and Spicy Vegetarian Soup with Ginger

Whether you have a cold and fever or just feeling slightly under the weather, this soup will not only clear the congestion but will also make you all feel all happy and mushy inside.

Some day’s cooking a meal is a pain in the ass. Especially when you are sick, all you want to do is crawl into the bed and hope for divine intervention. But since god is usually too busy to help with sinus, fever and cold, this soup is the next best option.

Spicy, so it clears up congestion really quickly and the anti-inflammatory properties of turmeric will take care of all the aches and pain.

It also cooks on its own with minimum stirring and tossing, you can finish an episode Brooklyn nine-nine while it simmers Make sure you drink it hot and keep tissues handy to wipe away the mucus which will try and leave you.

What you need:

  • 1 chopped onion
  • ½ finely chopped ginger
  • 250 gms of thinly sliced mushroom
  • 4 cubes of tofu
  • 1 cup vegetable stock
  • Chopped chillies (red or green)
  • Olive oil
  • 1 tablespoon chopped coriander

Method:

Heat olive oil in a deep pan, add the chillies, ginger, onion and fry until lightly cooked. Then add the mushrooms, vegetable stock, tofu and mix well. Add a teaspoon of apple cider vinegar and simmer on low flame for 30 min. Add salt, pepper and a pinch of turmeric and red chilly powder. Garnish with some chopped coriander leaves.

You can have it bread or rotis.
