Your Personal Potato and Egg Pan

I created this recipe on a cold dreary day. After my intensive 90 min yoga class, I was ravenous and exhausted and needed soul food. Nothing take-away or bought at the local restaurant but something home-cooked and rejuvenating. But I also had zero motivation to go grocery shopping. As it turns out, I had some ingredients in my pantry and I decided to make the best of it. Thus was born this one person potato and egg pan which basically needs 3-4 ingredients, tops.

This dish is ideal for days when you are feeling extra tired since it’s loaded with carbohydrates and with the right amount of protein. This is also a good post workout/recovery meal if you are into running or any other intensive routines. Regardless, this dish is delicious and with eggs and potatoes, you can’t really go wrong, can you? So here’s what you need to do:

Ingredients:

  • 2-3 small potatoes boiled, peeled and mashed
  • 2 eggs
  • 2-3 dried red chillies or any other chilies ( I like this super spicy but you can modify the amount as per your spice tolerance)
  • 1 tbsp salted butter
  • Salt and Pepper

Feel free to replace the butter with olive oil or vegetable oil.

Method:

Step 1: Heat the salted butter in a pan and add the chilles and saute gently.

Step 2: Now add the mashed potatoes along with some pepper and fry on medium heat for 2 minutes.

Step 3: Add salt as per taste, mix well and cook for 2 minutes more.

Step 4: Now lower the heat. Gently break 2 eggs on top of the potatoes and cover with a lid or plate for 6 minutes. The idea is to let the eggs cook fully without getting hard.

Step 5: At this point, remove the lid and check if the eggs are cooked as per your taste. You can add some more salt and pepper and some chopped corriander as a garnish. I prefer to eat it as it is.

Your personal egg and potato pan is ready! It is absolutely delicious and filling. Even though you can add additional vegetables to this dish such as carrots, capsicums, mushrooms etc, i recommend that you keep it simple and uncomplicated. The beauty of this egg and potato pan is that it’s uncomplicated and that’s why it hits all the right spots. Enjoy!
